Uhhh..who said that you cannot add soy sauce into the boiling water for the noodles? Plus he already explained why he chose to do that too. All because most people do not do that, doesn’t mean that there’s a written rule saying it’s incorrect. He is a great chef who is respected not only for his morals and ethics, but also for his culinary skills. If he was “messing around again and misleading everyone” like you stated, do you think that people would even bother to follow and like his cooking? It’s close-minded people like you in this world that makes it hard for the world to progress. If people didn’t have creativity or the courage to try something new then there wouldn’t be any new cuisines or dishes in the world. You’d have the same type of food every freakin’ day. As long as the people who ate the food enjoyed it, who are you to say that he is wrong?
