because 回头鱼 on the menu it says 中华鲟 it’s an endangered species in China, eating it is NOT recommended they are almost extincted, avoiding the name of the fish is NOT OKAY.
中华鲟 is a type of sturgeon. Restaurants in China would boast they have 中华鲟. In fact, those are not real 中华鲟 but commercially farmed sturgeons.
